Zusammenfassung:	The invention provides a preparation method of skin-removed and detoxified peach kernels, and the preparation method can produce high-yield peach kernel pulp by using Na2(subscript)CO3(subscript) andCaCl2(subscript) combination in peach kernel skin-removing alkaline solution; calcium ions are used to harden the peach kernels in the solution to prevent the peach kernels from softening; and the peach kernels are debitterized and detoxified by citric acid with a mass percentage of 0.15%-0.25% to achieve ideal skin removal and detoxification. 本发明提供种去皮衣脱毒桃仁的制备方法，所述方法通过在桃仁化皮碱液中采用NaCO和CaCl组合，高产桃仁果肉；利用溶液中钙离子硬化桃仁，防止桃仁变软；通过质量分数0.15％－0.25％的柠檬酸脱苦去毒，实现理想去皮脱毒。
