Zusammenfassung: | The invention provides a preparation method of skin-removed and detoxified peach kernels, and the preparation method can produce high-yield peach kernel pulp by using Na2(subscript)CO3(subscript) andCaCl2(subscript) combination in peach kernel skin-removing alkaline solution; calcium ions are used to harden the peach kernels in the solution to prevent the peach kernels from softening; and the peach kernels are debitterized and detoxified by citric acid with a mass percentage of 0.15%-0.25% to achieve ideal skin removal and detoxification.
