Zusammenfassung:The invention discloses a novel ethyl acetate production brewer's yeast strain and an establishment method and belongs to the technical field of biological engineering. According to the strain, a transcriptional regulatory factor Ga180 gene is adopted as an integration site in an original strain, meanwhile a strong promoter PGK1p is selected to over express acyltransferase AAT derived from a greenplant, and then two low-yield high-class ethyl acetate production brewer's yeast strains alpha-AeAT9 and alpha-VAAT are provided. After corn hydrolysate is fermented for 5 days, the contents of ethylacetate in transformed strains of overexpression alcohol acyltransferase AeAT9 and VAAT are respectively up to 883.6mg/L and 228.4mg/L, which are respectively 40.9 times and 10.6 times of those of the original strain; the contents of main higher alcohols (isobutyl alcohol, isoamyl alcohol, normal propyl alcohol and phenethyl alcohol) are respectively 101.1mg/L and 124.9mg/L, which are respectively reduced by 49.5% and 23.
