Zusammenfassung: | The invention relates to a method for producing sea fish micromolecular protein by bioanalysis. Sea fish is a high-quality animal protein nutrient source, but a processing and utilizing technique of the protein at present is low-end, or the added value of products is not high, or due to technical reasons, the product quality is not liable to accept by the market. The invention aims to provide a method for producing the sea fish micromolecular protein by using whole sea fish as a raw material. According to the method, microzymes are used as an enzyme source, and sea fish protein is converted into micromolecular protein; besides, through alcohol generated by yeast fermentation, separation of fat and fat soluble substances easily producing peculiar smell from protein is promoted; then througha multiple centrifuging and membrane technique, purification of the protein is completed; and through transglutaminase, the molecular weight of the sea fish micromolecular protein is increased, finally the micromolecular pro |
