Zusammenfassung: | The present invention discloses a method for preparing Pu'er tea by using a pressurized fermentation technology. The method comprises the following steps: 1) material preparing is conducted: fresh leaves of tea trees are enzyme-deactivated; the enzyme-deactivated tea leaves are rolled; and the rolled tea leaves are dried using a sunlight irradiation method to obtain raw tea; 2) pile fermentation is conducted: 2-1) pile forming is conducted: the raw tea and water are uniformly infiltrated at a weight ratio of 6:4; the infiltrated tea leaves form tea piles in a square manner; surface layers andperipheries of the tea piles are tightly wrapped with cotton cloth; and the fermentation starts; 2-2) pile turning and water supplementing are conducted: after the fermentation for two weeks, the pileturning is conducted; 2-3) pressurization is conducted: when the fermentation is conducted to third and fourth weeks, the tea piles are pressurized; and 3) a finished product is obtained: after the fermentation is finished, t |
