The anti-ultraviolet cellulose hollow capsule shell is characterized in that a capsule wall is of a structure with three layers or more than three layers of matrix layers; each matrix layer contains hydroxypropyl methyl cellulose; the thickness of each matrix layer is gradually reduced from outside to inside along the thickness direction of the capsule wall. According to the cellulose hollow capsule shell provided by the invention, interfaces among the plurality of layers of matrix layers with different thicknesses havea reflection effect on ultraviolet rays, the speed of irradiating pigments in the cellulose hollow capsule shell by ultraviolet rays to be decomposed is reduced and the preservation time of the colored cellulose hollow capsule shell is prolonged.
