Zusammenfassung: | The invention provides a method for preparing konjac oligosaccharide by carrying out enzymatic hydrolysis on a wet konjac raw material, which comprises: (1) preparing neutral beta-mannase solution; (2) preparing fresh konjac pulp; (3) carrying out hydrolysis on konjac glucomannan; (4) filtering hydrolysis solution of the konjac oligosaccharide; (5) removing alkaloid; (6) carrying out crude separation of the konjac oligosaccharide; (7) purifying the konjac oligosaccharide; (8) carrying out centrifugal spray drying. According to the invention, fresh konjac tubers are directly processed; processing time is short; a formed oligosaccharide product is clear in color, low in viscosity and low in production cost.
