Zusammenfassung: | The invention belongs to the technical field of tea processing methods, and particularly relates to a manufacturing method of a winter jujube bud green tea. The manufacturing method comprises the following four main process steps: withering, rolling, enzyme deactivation and drying. The withering process step comprises picking fresh winter jujube buds, soaking the winter jujube buds in an ethanol solution with a volume fraction of 80-100% for 5-10 min, taking out the soaked buds, and spreading the buds on a screen for 15-30 min so as to obtain withered tea leaves; and the rolling process step comprises spreading tea leaves subjected to the enzyme deactivation until the tea leaves are 30-35 DEG C, then mixing the tea leaves with an ascorbic acid solution at a mass ratio of 1000:(1-3), conducting full and uniform stirring, spreading the obtained tea leaves for 30-60 min, then rolling the tea leaves until tea strips are rolled tightly and tea juice spills but does not drip, so that rolledtea leaves are obtained. |
