Zusammenfassung: | The invention provides a strawberry fresh-keeping method. The method comprises the following steps: firstly, placing strawberries in a plastic or glass container with a light transmittance of 2.9x10 mol smPa to 3.2x10 mol smPa; preparing an aqueous solution by sodium alginate, starch, cellulose, organic acid and potassium sorbate; subjecting the solution to high-temperature and high-pressure sterilization and inactivation, and adding a proper amount of calcium chloride; and spraying the obtained solution on strawberry surfaces, keeping the temperature of the container at 5-12 DEG C for 1h or above, and carrying out vacuum packaging and transportation as needed. The strawberry fresh-keeping method provided by the invention is practical and reliable, good in fresh-keeping effect and free from harmful substances, and causes no damage to the human body.
