The nucleotide sequence of the shear resisting starch biosynthesis recombinant gene YXII isshown as SEQ ID NO:1; glgC55 of an adp-glucose pyrophosphorylase encoding gene is obtained by separation from an escherichia coli JM109-3 mutant strain; an adp-glucose pyrophosphorylase AGPase smallsubunit encoding gene SSU cDNA and starch synthase encoding gene GBSSI promoters combined with starch grains are obtained by independent separation of tomatoes, wherein an AGPase subunit for encoding431 amino acids by the glgC55 has four specific mutations, namely K39E, V71A, 1248V and K304E; the K39E and the V71A appear in a Rossmann fold domain of an oligomeric subunit N-terminal metabolic group, and the 1248V and the K304E appear in an oligomeric subunit C-terminal heterogeneous regulation and oligomerization LbH group.
