Zusammenfassung: | The invention belongs to the technical field of biological fermentation engineering, and discloses an Antarctic krill antioxidant peptide as well as a preparation method and application thereof. The method comprises the following steps: (1) uniformly mixing defatted Antarctic krill powder, water and a carbon source, and adjusting the pH of the solution to 7.0 to 7.5, and sterilizing to obtain an Antarctic krill powder solution; (2) inoculating bacillus subtilis into a liquid culture medium, and culturing on a shaking table for 20 to 24h at a temperature of 29 to 31 DEG C to obtain a bacillus subtilis seed liquid; (3) mixing the bacillus subtilis seed liquid with the Antarctic krill powder solution, fermenting on the shaking table for 35 to 42h at a temperature of 30 to 40 DEG C, centrifuging, concentrating a supernatant, and drying to obtain the Antarctic krill antioxidant peptide.
