Zusammenfassung: | The invention provides a brewing method of red date wine. The brewing method comprises the following steps: fermentation: mixing 1 part of dry red dates with 2.6 parts of water in parts by mass, soaking, and adding 0.008 part of distiller's yeast for fermentation, so as to obtain a fermented product; (2) primary distillation: putting the fermented product obtained in the step (1) into a distillation tank, carrying out primary distillation at 65 DEG C for 15-25 minutes, and carrying out distillation at 80 DEG C for 2-3 hours, so as to obtain primarily-distilled red date wine; (3) bitterness removal: mixing 0.2-5 parts of dry red dates with 1 part of the primarily-distilled red date wine, carrying out sealed storage at the normal temperature for 10 days, so as to obtain distilled red date wine; and (4) secondary distillation: putting the prepared red date wine stock solution into the distillation tank, carrying out secondary distillation at 65 DEG for 15-25 minutes, and carrying out distillation at 80 DEG C for |
