Zusammenfassung:The invention discloses a method for extracting edible starch from wild acorn nuts. The method comprises the following steps of (S1) shelling wild acorn nuts, putting the wild acorn nuts into a cleaning container, adding 8-12fold clear water to the cleaning container, applying an ultrasonic wave for 20-40min to the clear water in the cleaning container through an ultrasonic generator, wherein the frequency of the ultrasonic wave is 5-8KHZ and the sound intensity of the ultrasonic wave is 5-9W/cm ; (S2) putting the cleaned wild acorn nuts into a crushing device, crushing the wild acorn nuts to 50-70mesh fineness to obtain nut power; (S3) putting the nut power into a reaction container, carrying out aerobic fermentation, adding 2-4fold clear water to the fermented nut powder, fully stirring for 10-30min and extracting the starch; and (S4) carrying out low-temperature cold storage treatment on the starch, putting the starch into a refrigerating chamber with the temperature of 0-3 DEG C for 2-4h and taking out th
