The manufacture method comprises the following operation steps: dried tangerine peels, old gingers, scallions, dried chilies and crystal sugar are prepared; a slaughtered old duck at 1-1.5 kg is prepared, the old duck is cut into blocks, an appropriate amount of salt is added, and the old duck is mixed evenly; the scallions and old gingers are poured into a pot to be stir-fried to produce fragrance using moderate and low heat, then the old duck is poured into the pot to be stir-fried, then the crystal sugar is added, then an appropriate amount of water is added, and duck meat is stir-fried to be fragrant and stir-fried thoroughly; an appropriate amount of aged glutinous rice wine is added, the wine is stir-fried to be dry, water is added to cover the duck, the dried tangerine peels and chilies are added, a pot cover covers the pot, the duck is boiled out using high heat, a low heat is turned, and the duck is stewed for 2-2.5 hours; a |
