Zusammenfassung: | The invention discloses a method for extracting an apricot kernel protein employing electrolytic water and aims at solving the problems that the method is large in alkaline agent dosage and relatively low in extraction rate and yield. The method comprises the following steps of (1) peeling apricot kernels, carrying out grinding, degreasing and suction filtration, ventilating filter residues to volatilize petroleum ether and then obtaining degreased apricot kernel powder; (2) adding electrolytic water of which the pH is 8-10 to the degreased apricot kernel powder obtained in the step (2) to prepare a mixed liquid, adding an alkaline agent, carrying out magnetic stirring extraction and centrifugal separation in a warm water bath kettle and taking a supernatant; (3) adjusting the pH value of the supernatant obtained in the step (2) to be 4-4.5 by using an acid agent, standing, precipitating, centrifuging and then washing a sediment by using ultrapure water to obtain an apricot kernel protein sediment; and (4) di |
