Zusammenfassung:The invention belongs to the technical field of aquatic product processing, and in particular relates to a preparation method of nano zinc oyster powder, which comprises the following steps: (1) oyster pretreatment: dehulling oysters, cleaning and removing impurities, draining, stamping tissues to obtain slurry, and defatting to obtain defatted oyster powder; (2) oyster enzymolysis: preparing the defatted oyster powder into a water solution, carrying out enzymolysis, deactivating enzymes, cooling, centrifuging and separating, collecting supernatant, concentrating in vacuum, and spray-drying to obtain oyster peptide powder; and (3) nano zinc treatment of oyster peptide: preparing the oyster peptide powder obtained in the step (2) into a water solution, adding zinc sulfate at room temperature until a certain concentration is reached, mixing, regulating the pH value, allowing reaction, concentrating the reaction solution in vacuum, and spray-drying to obtain nano zinc oyster powder.
