Zusammenfassung: | The invention discloses a green fresh-keeping method of an UV-B irradiated mung bean sprout seedling vegetable and belongs to the technical field of vegetable fresh-keeping technology. The method provided by the technical scheme of the invention is characterized in by comprising the following steps of: putting mung beans in a container; soaking the mung beans in the dark with tap water at 30 DEG C; putting the mung beans in a seedling tray, uniformly paving the mung beans and transferring the mung beans in a bean sprout growing machine to be cultivated for 60h; taking out the mung bean sprouts together with the seedling tray from the bean sprout growing machine; and performing UV-B irradiation treatment in a dark condition for 1h to obtain a good fresh-keeping effect on the mung bean sprout seedling vegetable.
