The fresh soybean oil processing technology comprises the following steps: I, transporting newly-harvested or low-temperature stored soybeans to a fresh-keeping after-ripening granary, storing for 7 to 10 days at the temperature of 22 to 27 DEG C, and performing the after-ripening treatment; II, squeezing or extracting the soybean after the after-ripening treatment to obtain soybean crude oil; III, performing hydrated degumming for the soybean crude oil, and then performing high-efficiency alkali refining treatment to obtain alkali refined oil; and IV, after grease bleaching, deodorization and cooling, enabling the alkali refined oil to enter an oil transport pipe and an oil tank of an nitrogen atmosphere to be stored.
