Zusammenfassung: | A method for preparing low-cholesterol yolk powder containing alpha-linolenic acid and potassium ions comprises the following steps: 1, preparing an aqueous yolk solution containing potassium ions; 2, preparing a low-cholesterol yolk solution containing potassium ions; 3, preparing a low-cholesterol yolk solution containing alpha-linolenic acid and potassium ions; 4, preparing low-cholesterol yolk powder containing alpha-linolenic acid and potassium ions; and 5, extracting cholesterols and recovering beta-cyclodextrin. The low-cholesterol yolk solution containing potassium ions is prepared from egg yolks through adopting potassium hydroxide as a solution pH value regulator and beta-cyclodextrin as an embedding agent by removing parts of cholesterols from yolks through using a technology.
