Zusammenfassung: | The invention provides a preparation method of dried preserved fruits. The preparation method includes the steps of: (1) selecting fruits, cleaning and peeling the fruits and draining the fruits; (2) cutting the fruits into dices in uniform size and removing seeds; (3) pre-boiling the diced fruits in steam for 30-40 min; (4) beating the pre-boiled diced fruits into uniform and fine paste; (5) adding white sugar and agar to the fruit paste and uniformly stirring the mixture; (6) steam-boiling the mixture in a jacketed pot, and when the mixture starts to solidify, shaping the steam-boiled mixture in a shaping mould; (7) drying the shaped mixture and taking the product out until the mixture is elastic and is not sticky, and sprinkling a less amount of edible starch and packing the dried preserved fruits. The preparation method is simple, is convenient to carry out and employs easy-to-obtain and low-cost raw materials. The dried preserved fruits satisfy demands on foods in present society.
