The fluorescence optical fiber temperature sensor includes an optical fiber including a detection head and a photoelectric converter connected with the optical fiber, the optical fiber is matchingly connected with the interface of the photoelectric converter, the protective cover is matchingly connected with the interface of the photoelectric converter, the protective cover comprises housing with a cylindrical front opening, a magnetic steel tube movably arranged at the middle portion in the housing and stretching along the length direction of the housing, the housing is separated into a front cavity and a back cavity through a vertically arranged ring baffle; one end of the magnetic steel tube is movably arranged in the back cavity through an insertion rod, and the other end of the magnetic steel tube passes through the middle portion of the ring baffle and extends out of the housing; the outer sleeve of
