The preparation method mainly comprises the following steps: dissolving starch in water to obtain starch milk; regulating the pH value, adding raw starch digesting amylase, and reacting at a certain temperature for some time; further regulating the pH value and the temperature, slowly adding octenyl succinic anhydride diluted by anhydrous ethanol, and reacting for some time; and after the reaction is completed, washing the reaction solution with anhydrous ethanol, collecting solids, drying, and pulverizing to obtain the porous starch octenyl succinate.
