The preparation method comprises the following steps: (1) material selection; (2) peeling; (3) walnut testa treatment; (4) drying; (5) walnut oil cold pressing; (6) superfine grinding , wherein walnut testa powder obtained in the step (2) and walnut cake obtained in the step (5) are mixed, and crushed by a high-speed jet mill to obtain ultramicro walnut powder; and (7) vacuum nitrogen-filled packing, wherein the obtained ultramicro walnut powder is subjected to vacuum nitrogen-filled packing. The walnut powder disclosed by the invention is long in storage life, and deoxidizing agent bags are not needed.
