Zusammenfassung:The invention relates to an ultrahigh-pressure extraction method for pigment in fruit and vegetable, belonging to the technical field of assisted extraction of natural pigment. The method comprises the following concrete steps: (1) cleaning and crushing fruit and vegetable (such as mulberry, blueberry and blackberry) rich in pigment, placing the fruit and vegetable and an extraction solvent in a high-pressure-resistant container and sealing the container; (2) subjecting the container filled with the fruit and vegetable to ultrahigh-pressure treatment at pressure of 300 to 600 Mpa for 5 to 20 min; and (3) after ultrahigh-pressure assisted extraction, carrying out filtering, collecting filtrate, and subjecting the filtrate to purifying, concentration and drying so as to obtain pigment. Compared with a traditional pigment extraction method, the method provided by the invention has the following advantages: since the extracted fruit and vegetable pigment does not undergo heat treatment, activity loss is small, th
