Zusammenfassung: | The invention discloses a manufacturing method of coffee wine. The coffee wine with thick fragrance is manufactured through distilling fermentation broth obtained through fermentation of a residual mixed liquid with addition of water after raw coffee beans are fermented. The method mainly comprises: fermenting the raw coffee beans in a biomimetic fermentation manner to achieve ideal fermentation of the raw coffee beans with nutritive components left in the raw coffee beans; taking the fermented raw coffee beans out; washing the residual liquid on surfaces of the fermented raw coffee beans with clean water; mixing the residual liquid with the fermented broth produced after raw coffee beans are fermented to obtain a mixed liquid, which contains a residual natural sugar degree after the raw coffee beans are fermented; adding sodium metabisulfite (Na2S2O5) and performing mixing; and adding microzymes and performing stirring; and distilling the mixed liquid after 6-15 days to extract the coffee wine.
