Zusammenfassung: | The invention provides a preparation process of lotus cake. The preparation process comprises the following steps: (A) mixing grain materials including rice flour with water to obtain rice milk, cooking the rice milk at high temperature, and then cooling; (B) mixing compound nutrients with water to obtain a nutrient solution; (C) mixing rice milk obtained in the step (A) with the solution obtained in the step (B), molding, then freezing and freeze-drying to obtain lotus cake. The traditional food-lotus cake is obtained by size mixing, high-temperature cooking and freeze-drying processes, and the compound nutrients are added in the preparation process, so that the lotus cake can meet the requirements of babies in weaning period. Meanwhile, as the freeze-drying forming process is adopted in the preparation process, nutritional loss of the lotus cake is reduced. The preparation process is simple and can realize quick preparation of the lotus cake. |
