Zusammenfassung:The present invention discloses an instant clam processing method which mainly solves the problems that the existing clam products are not easy for preservation and inconvenient for consumption. Fresh and alive clams are put into a salt water to be soaked to spit the sediment clean, the soaked clams are put into a boiling water to be boiled, the boiled clams are shelled, and the clam meat is taken out; the clam meat is subjected to a water retention treatment in an iced salt water; the treated clam meat is put into a boiling seasoning liquid and basket screened and boiled water to be boiled until the clam meat is tasty, and the boiled clam meat is sterilized and packaged to obtain the finished products. The processing method is reasonable in processes and simple in preparation. The method processed instant clam is invariant in nutrients, delicious in taste, flexible and tender in mouthfeel, convenient in food, and long in shelf life.
