Zusammenfassung: | The invention provides a processing method for instant egg-carrying sleeve-fish with fish eggs and a sleeve-fish body difficult to separate. The processing method comprises the steps that the head, skin and viscera of fresh sleeve-fish are removed, and then the treated fresh sleeve-fish is put into water at the temperature of 90-100 DEG C to be heated for 4-6 min; the heated sleeve-fish is put into water at the temperature of 5-10 DEG C to be cooled for 8-12 min until the center temperature of the sleeve-fish is decreased to 10 DEG C or lower; fresh fish eggs are added with salt and stirred to be prepared into caviar, and the temperature of the fish eggs is controlled to be 0-5 DEG C; the abdomen of the pretreated sleeve-fish is filled with the caviar; the sleeve-fished filled with the caviar is put in an environment at the temperature of 0-5 DEG C for cold storage for 2-4 h, and the finished instant egg-carrying sleeve-fish is obtained after cold storage.
