Zusammenfassung: | The invention discloses a dark tea processing method. The method comprises the steps of leaf picking and pretreatment, de-enzyme, primary rolling, piling, re-rolling and drying. According to the method, in the processing process, first part of moisture in tea is evaporated through spreading for cooling, tea can undergo de-enzyme fully by steam de-enzyme, the moisture distribution is more uniform, the piling is performed after the primary rolling, so that tea is fermented more comprehensively, the moisture of the tea is reduced after the re-rolling, and the fragrance of dark tea is further improved after the tea is dried three times. According to the method, the spreading for cooling is combined with a conventional dark tea processing process, the quality of the dark tea is improved, the prepared dark tea is jet-black in color and oily, and the made tea is golden and transparent in color and mellow in taste. |
