The invention relates to a breeding method of paddy rice being good in mouth feel and rich in nutrition, which includes the following steps: 1) collecting paddy rice seed materials, wherein some seeds in proper amount are retained for later use, grinding the rest of the seeds into polished rice to prepare polished rice flour; 2) primarily selecting paddy rice materials corresponding to a sample of which the starch adhesive strength is higher than that of common paddy rice by more than three times in an urea solution being 6M in concentration and 6.5 in pH value, continuously planting the selected rice materials; 3) after the paddy rice materials are harvested, retaining a proper amount of seeds for later use; 4) dehulling and processing the rest of the seeds into unpolished rice, steam-boiling the unpolished rice, determining the paddy rice variety, of which unpolished rice texture is similar to the texture of common polished rice; and 4) performing reproduction, and verifying starch adhesion characters and texture stability of the unpolished rice to obtain the paddy rice being good in mouth feel and rich in nutrition. The paddy rice cultivated by the method is rich in vitamins, minerals, calcium, cellulose, potassium, magnesium, zinc, iron and other microelements, is suitable for daily use of people, and can fundamentally treat the diseases such as iron-deficiency anemia, myocardial infarction, lumbar vertebra osteoporosis, high fat and high blood pressure and the like.
