The seasoning is prepared from the following raw materials by weight: old hen skin, sweet potato starch, alpha-amylase, glucoamylase, edible alkali, saturated lime water, white vinegar, old hen, mushroom, licorice, ginseng slice, hot chilli oil, thick broad-bean sauce, alginate, Chinese chestnut kernel powder, ginkgo fruit and a proper amount of water. According to the invention, the old hen is cooked and braised at high temperature and high pressure so as to obtain soup with delicate taste, and the soup contains a plurality of amino acids and aromatic ester components impacting the sense of taste and is rich in nutrients; the soup is cooperated with specially-produced porous starch particles, so odor is effectively preserved, emission of delicate flavor is delayed, and long-term preservation is realized; meanwhile, the seasoning is convenient to use, can be used for enhancing the taste of noodles, cold vegetable dishes in sauce and a variety of cooked food and whets the appetite. |
