The invention discloses composite hovenia acerba and walnut juice and a processing method thereof. The composite juice consists of the following components in parts by mass: 100 parts of hovenia acerba juice of 13-15Brix, 30-40 parts of walnut milk and 0.1-0.4 part of composite glue, wherein the hovenia acerba juice of 13-15Brix is obtained through the following steps of: obtaining first squeeze juice through cleaning, crushing, squeezing and performing enzyme deactivation on hovenia acerba fruits, obtaining second extraction juice through processing squeezed hovenia acerba residues with hot water, leaching the hovenia acerba residues processed with the hot water and squeezing leach liquor, mixing the first squeeze juice and the second extraction juice and adjusting the Brix with water. The walnut milk is obtained through the following steps of grinding peeled walnut kernels and water into syrup and screening the syrup. According to the composite hovenia acerba and walnut juice and the processing method thereof disclosed by the invention, the walnut milk is used for correcting the flavor and the appearance of the hovenia acerba juice and assisting nutrition, the walnut milk provides possibility for the utilization of high added value of a valuable resource namely hovenia acerba in China, and the market prospects are quite broad.
