Zusammenfassung:The invention belongs to the technical field of a health food, and discloses a candy taking pine needle as a raw material and a preparation method of the candy. The preparation method comprises: boiling fresh pine needle with water, the mass of which is 8-10 times that of fresh pine needle, with big fire; performing decocting for 60-80 min with small fire; performing filtering; adding water to the pine needle, wherein the mass of water is 4-6 times that of the pine needle for secondary decocting; performing decocting for 30-40 min with small fire; performing filtering and combining the filtrate; concentrating the filtrate to a volume, 1/160-1/120 of the original volume; adding maltitol and erythritol at a temperature kept in 98-100 DEG C; performing uniform mixing; performing continuous heating till the temperature is 103-108 DEG C to enable maltitol and erythritol to be completely dissolved; and performing injection molding while the obtained product is hot. The candy is directly obtained through performing water extraction and concentration of fresh pine needle and mixing the obtained product with maltitol and erythritol. The preparation method is simple; the raw material can be widely obtained; and the preparation cost is low. The candy is easy to carry and eat, and the preparation method has a bright application prospect.
