The technology is as follows: rice is ground into a slurry, The medium temperature alpha amylase, the xylanase and the glucoamylase are added, and a starch enzymatic hydrolysis solution is prepared; a fermentation medium is prepared, corynebacterium crenatum B9 is selected, strain inoculation is carried out for fermentation, the inoculation amount is 1%, the fermentation temperature is 37-39 DEG C, and the culture time is 25-28h; thin and long crystals are selected as seed crystals, the pure liquid dosage is 38%, the mother liquid dosage is 62%, crystallization is carried out and the primary crystallization rate is 68.1%, and thin, long, bright and clean monosodium glutamate is obtained, 1g of crystal monosodium glutamate contains 1105-1110 particles, and the monosodium glutamate is fluffy in volume. The purity of the prepared monosodium glutamate can reach as high as 99.9%. The enzymolysis time is short, strains can be inoculated for fermentation directly, the fermentation efficiency is high, the fermentation time is short, and the cost is saved.
