Zusammenfassung:The invention discloses a fungus flora forming and strain obtaining method in a Liubao tea pile fermentation process. According to the method, the quantity change condition of fungi in Liubao tea in the pile fermentation process is obtained; in a pile fermentation tea pile, the microbial quantity differences of the upper layer, the middle layer and the lower layer are great; 12 kinds of different fungus strains in the pile fermentation process are obtained; in the Liubao tea pile fermentation process, aspergillus fungi and yeast are used as major fungi; and dominant microbes in the pile fermentation process are aspergillus niger and yeast. The fungus flora quantity and the fungus phase change in the Liubao tea pile fermentation process are obtained; dominant strains in the pile fermentation process are screened out; the influence of the dominant strains on the Liubao tea pile fermentation is primarily studied; the theoretical basis is provided for the study and the production of the Liubao tea; meanwhile, the reference is provided for improving the fermentation process of the Liubao tea and studying the artificial fungus fermentation; the influence of microbes on the quality, the safety and the flavor of the Liubao tea are comprehensively disclosed; and important significance is realized on optimizing the production of the Liubao tea and improving the quality.
