Zusammenfassung: | The invention relates to a fresh-cut fruit edible film coating antistaling agent as well as a preparation method and application thereof. The antistaling agent comprises multiple components including Pulullan, anthocyanin, an antioxidant, an emulgator, calcium chloride, nano calcium carbonate and sodium stearate. Pulullan is a colorless, tasteless and scentless macromolecule substance, and has edibility, biodegradability and a good film-forming property; the prepared film has a good gas barrier property and watertightness, and is very suitable for film coating preservation of foods, such as fruits; in addition, nano calcium carbonate, anthocyanin and sucrose fatty acid ester are added into the antistaling agent, and generate a synergistic effect with Pulullan, so that the antistaling effect of the film coating antistaling agent is enhanced obviously, and thus the nutritional value, color, fragrance, taste and shape of a fresh-cut apple are maintained well, and the storage period of the apple is prolonged. |
