Zusammenfassung:The invention discloses a processing method of Sanhua plum preserved fruits. No report for preparing Sanhua plums into preserved fruits exists in the prior art; any technical disclosure to industrial preparation of the Sanhua plum preserved fruits does not exist. In the folk, the deep processing on the Sanhua plums is pickling; by using the pickling mode, the sanitation index is difficult to reach; the quality is difficult to ensure. The method comprises the technical steps of ingredient selection, ingredient cleaning, half cutting, blanching sterilization, first sugar pickling, secondary sugar pickling, fruit slice acid regulation, fruit slice plate arranging, fruit slice drying and the like. According to the method adopting the measures, from the raw material selection, twice sugar pickling and three times of drying are carried out; specific measures are adopted on the Sanhua plums in a targeted way, so that after the Sanhua plums are prepared by the method provided by the invention, the obtained preserved fruits have vivid and fine pulp, intense fruit flavor, unique flavor, delicious sour and sweet taste, and realizes perfect combination of the color, the fragrance and the taste; the active ingredients are completely reserved; the sanitation indexes completely conform to requirements; after the storage period for one year, the appearance and the internal quality are not obviously changed.
