The invention discloses a potato shredding machine. The potato shredding machine comprises a knife disc capable of rotating around the center. A feeding hopper is arranged on the rear side of the knife disc, and a discharging port facing the back face of the knife disc is formed in the side wall of the lower end of the feeding hopper and attached to the back face of the knife disc. Long-strip-shaped shredding knives are arranged on the back face of the knife disc in the radial direction of the knife disc, each shredding knife is provided with a plurality of convex arc blades in the length direction of the shredding knife, the inner sides of the blades and the back face of the knife disc define material sliding chutes for discharging, knife edges of the blades face the direction perpendicular to the radial direction of the knife disc, blocking parts are arranged at knife tails of the knife edges and used for blocking discharging ports of the material sliding chutes, and discharging holes are formed in the knife disc and communicated with the material sliding chutes and the front face of the knife disc. The potato shredding machine is simple in structure, convenient to operate and high in shredding efficiency.
