Zusammenfassung: | The invention provides an anti-browning corrosion prevention refreshing method of a fresh-cut lotus root. The method includes the following steps of 1, postharvest pretreatment of the fresh lotus root; 2, cutting, wherein peeled lotus sections are quickly and evenly cut into pieces or blocks; 3, anti-browning corrosion prevention preservative soaking processing, wherein the cut locus pieces or blocks are soaked through anti-browning corrosion prevention preservative composed of edible alcohol with the weight percentage concentration being 10%-30% or the edible alcohol with the weight percentage concentration being 10%-30% plus an ascorbic acid aqueous solution preparation with the weight percentage concentration being 1%, and the redundant moisture attached to the surfaces of the locus species or blocks after being cleaned is removed; 4, fresh-keeping packaging; and 5, preservation and cold storage. By means of the method, the problems of brown stain and rot of the fresh-cut locus root are solved at the same time, the appearance and quality of fresh-cut locus processed product are effectively improved, the food quality safety is enhanced, and the shelf life of the product is prolonged. |
