Zusammenfassung:	The invention provides a preparation method of egg yolk oil, and a supercritical carbon dioxide extraction method is adopted to prepare the egg yolk oil. The method comprises the steps that egg yolk powder is taken, and extraction is conducted for 105-120 min under the condition that the extraction pressure ranges from 35 MPa to 38 MPa, the CO2 flux is 50 L/h, and the extraction temperature is 50 DEG C. According to the the preparation method of the egg yolk oil, the egg yolk oil can be extracted effectively, the yield reaches up to 42.65%, the extraction pressure is small, the extraction temperature is low, the extraction time is short, the cost is low, the cost and the yield can be taken into account at the same time, and the industrial application prospect is good.
