Zusammenfassung:The invention relates to a processing method of canned sweet sour fragrant crisp fish bones. The processing method comprises the following steps: taking fish slice leftovers, putting the taken fish slice leftovers in an acetic acid aqueous solution, soaking the fish slice leftovers in the acetic acid aqueous solution, scooping out the soaked fish slice leftovers, draining the fish slice leftovers which are scooped out, placing the drained fish slice leftovers in an active dry yeast aqueous solution, fermenting the fish slice leftovers, scooping out the fermented fish slice leftovers, placing the fish slice leftovers which are scooped out in clean water to be rinsed, and airing the rinsed fish slice leftovers; taking linseed oil, pouring the taken linseed oil in a pot, heating the linseed oil until oil froth completely retreats, pouring out the heated linseed oil, heating the pot, then pouring cold linseed oil to the hot pot which is used for heating the linseed oil, putting the fish slice leftovers into the hot pot, frying the fish slice leftovers until two sides of the fish slice leftovers are yellow, scooping out the fried fish slice leftovers, draining the oil, and cooling the fish slice leftovers to room temperature; taking linseed oil, pouring the linseed oil in the pot, heating the linseed oil until the oil froth completely retreats, putting the taken fish slice leftovers which are fried for the first time into the pot, and frying the fish slice leftovers for the second time, scooping out the fried fish slice leftovers, and draining the oil; and then cooking the fish slice leftovers with sweet sour juice after the oil is drained, and finally adding ginger powder, garlic cloves, scallion sections, fennel seasoning packets for cooking the fish slice leftovers at high temperature and high pressure so as to obtain the sweet sour fragrant crisp fish bones.
