Zusammenfassung: | The present invention relates to a wheat bran dietary fiber and wheat bran small peptide cogeneration process which is characterized in that the process comprises the following steps: subjecting wheat bran to colloid mill processing after crushing and soaking in hot water; adding acid protease at a condition of pH 6.0-6.5 to degrade wheat bran proteins, conducting pressure filtration, concentrating and spray-drying the filtrate to obtain spray-dried wheat bran small peptide (a byproduct); directly subjecting the filter residue to double-screw extrusion puffing, and adding complex enzyme (pectinase and phytase at a ratio of 1: 1) under an acidic condition; after taking reaction for a certain time, adding medium temperature amylase; and subjecting the materials to reduced pressure concentration, hot air drying and crushing to obtain the wheat bran dietary fiber (a main product). The wheat bran dietary fiber produced according to the method has good water absorption, swellabitity and palatability. The wheat bran small peptide also has good nutritional value. The cogeneration process ensures complete utilization of wheat bran, and increases economic efficiency without environmental pollution. |
