Zusammenfassung:The invention relates to the field of food processing, particularly a preparation method of low-fat tiger skin rolls. The tiger cake rolls which are public pastry are prepared by wrapping chiffon cakes by tiger skin rolls and rolling the chiffon cakes. As a yolk liquid for making the tiger skin rolls contains a relatively high content of grease, so that the risk of suffering from coronary heart disease, hypertension and cancers is increased. By adopting a low-temperature centrifugal separation technology, over 50% of grease in the yolk liquid is separated to obtain yolk slurry so as to prepare the tiger skin rolls. By adding passion fruits, the flavor and nutritional value of the tiger skin rolls are enriched. The tiger skin rolls provided by the invention not only have excellent color and luster and toughness, but also reduce the intake of grease. The tiger skin rolls wrap vegetables and/or fruits, so that the tiger skin rolls are rich in vitamins, minerals and dietary fiber, and the tiger skin rolls not only have good taste and flavor, but also are nutritional and healthy.
