Zusammenfassung: | The invention discloses a preparation method of lemon slices. The preparation method comprises the following steps: cleaning fresh lemon fruits with water containing 0.4mg/L-10mg/L of ozone for 5-10 min, and disinfecting and sterilizing to remove residual pesticides; slicing, laying a single layer of lemon slices flat on a baking tray and sending the baking tray into a drying house, wherein drying temperature is 60-65 DEG C and constant temperature drying time is 7.8-8.2h. By simulating the outdoor natural drying principle, fresh lemon slices are dried at low temperature, and defects of sand and dust pollution and insect bites by a folk outdoor airing dehydration technology are completely avoided. Any food additives, preservatives, essence or pigments are not added during processing. In comparison with a traditional high temperature baking technology, the preparation method can be adopted to maintain original color, fragrance, taste and abundant nutritional ingredients of lemon. The invention also can be applied to processing of leaf and solanaceous vegetables and drying of traditional Chinese medicinal materials. |
