Zusammenfassung:The invention discloses a method for processing flax potato chips by microwave without deep frying, and belongs to the technical field of food processing. In order to provide convenience for people to eat flaxseed and sufficiently apply the nutritional functions of the flaxseed, a production method of flax potato chip foods is designed according to requirements for the health of a human body. The method adopts microwave production, and comprises the steps of microwave detoxification (performing microwave roasting so as to decompose trace of cyanogenetic glycosides on the epidermis of the flaxseed), microwave blanching (fresh potato chips), and microwave expansion. The raw materials adopt the flaxseed and potato chips instead of only potato chips, and the conventional deep frying and high-temperature roasting are not adopted, so that the nutrient substances of flax and potatoes are maximumly retained, and the taste of traditional potato chips is maintained.
