Zusammenfassung: | The invention discloses a chopped chili-fermented bean seasoning and a preparation method thereof. The chopped chili-fermented bean seasoning is prepared from the following raw materials in parts by weight: 30-50 parts of fermented beans, 24-44 parts of rapeseed oil, 18-38 parts of chopped chilies, 2-3.2 parts of common salt, 0.6-1.8 parts of monosodium glutamate and 1-5 parts of liquor. The preparation method comprises the steps: weighing the rapeseed oil according to parts by weight, putting the rapeseed oil into a pot, heating the rapeseed oil to the temperature of 190-210 DEG C, adding the chopped chilies, the common salt and monosodium glutamate, and frying for 8 minutes; weighing the fermented beans according to parts by weight, adding the fermented beans into the prepared chopped chilies, and continuing to fry for 8 minutes, so as to obtain a chopped chili-fermented bean seasoning semi-finished product; rapidly sprinkling the liquor, which is prepared in advance, into the chopped chili-fermented bean seasoning semi-finished product, uniformly stirring, cooling, and then, carrying out sealed packaging, thereby obtaining the chopped chili-fermented bean seasoning product. According to the seasoning disclosed by the invention, the flavor is unique, the nutrition is rich, the preparation method is simple, and the original nutrition and flavor of the seasoning can be kept after long-term storage. |
