Zusammenfassung:The invention provides a manufacturing method of delicious loach soup and congee. The materials containing loach, oil, salt, sugar, powdered pepper, ginger, wine, dried longan, Codonopsis pilosula and red date are selected. The manufacturing method is as below: 1. spitting mud: placing the loach into a basin, dropping three or four drops of peanut oil, so that the loach spits out sludge in the belly 10 min later to remove the odor; 2, blanching: blanching the loach in water of 50 DEG C, fishing out, wiping the water and mucus of the loach by gauze, and chopping the loach into a mud; 3, putting the loach mud in a pan, adding a small of peanut oil and frying with slow fire to remove the moisture; 4. decocting: adding an appropriate amount of peanut oil and ginger, frying the loach mud with strong fire for two minutes, adding 50 ml of rice wine, then a moment later adding 1500 ml of purified water, 2 grams of dried longan, 2 grams of Codonopsis pilosula and three or four dates, decocting in the soup pot for 3 h, until the soup becomes milky white; and 5, blending: filtering the decocted soup into the soup basin, adding the loach mud into the cooked rice congee, and respectively blending an appropriate amount of salt, sugar and pepper, so as to obtain delicious loach soup and congee.
