The process adopts soybean with high quality. The soybean is mixed with broad bean, flour, table salt and water and brewed. The process is simple in steps, reasonable, and convenient in preparation. A product of the process is good in stability, uniform in color and unique in sauce fragrance and meets related requirements in China. In particular, detection results about sauce fragrance and reducing sugar are particularly good. The process is free of addition of other additives, and can allow special compounds which are isoflavone components in the soybean to be not destroyed. After eating of the soy sauce by customers, growth of malignant tumor can be even inhibited. |
