Zusammenfassung: | The invention relates to a desiccation-tolerant low-temperature edible collagen membrane and a production process thereof. The invention is characterized in that the specific technical scheme comprises the following preparation steps: 1, preparing raw materials; 2, adding food additives; and 3, coating. The invention has the following beneficial effects: the edible protein membrane is prepared from edible gelatin, edible glycerol, arabic gum and other raw materials, is still soft in a low-temperature drying environment and has favorable mechanical property. Meanwhile, the invention also has the following characteristics: 1, the edible collagen membrane is liable to biodegradation; 2, the product can satisfy the barrier action of the edible membrane; 3, the gum-based protein is used as an envelope; 4, the edible collagen membrane can be taken with the product after the both are directly dissolved in hot water; 5, the edible collagen membrane can be used for low-capacity single food packages having big size difference; 6, the edible membrane and an inedible thin film compose a multi-layer composite package, thus improving the integral blockage performance; and 7, the edible collagen membrane can be used as a carrier for various food additives, food flavoring agents and antimicrobial preparations. |
