The high-quality natural pectin extraction technology comprises the following steps: adding squeezed fresh juice into a reaction kettle, heating for water extraction, filtering extract with a centrifugal filtration device, adding amylase into filtrate, obtaining wet pectin after processes of decoloring, concentration, pectin precipitation and washing, crushing the wet pectin, baking and grinding the crushed pectin, thus obtaining the pectin product. In the technology provided by the invention, the squeezed fresh juice is used as raw material instead of conventional baked fruit dregs, baking procedure and conventional dry fruit dreg cleaning step are reduced, and raw material cost is lowered greatly; a macroporous cation exchange resin is used for pectin decoloring, thus introduction of ions is avoided; an MVR evaporator is used for concentrating the extract, steam is used continually after recompression, condensate water can be used as pectin extraction water again, so that energy consumption is reduced, water is saved, and sewage discharge is reduced.
