Method of producing dewatered acidic milk

Process for preparing a dehydrated acidified milk by fermentation of a milk to a pH of 4.0-5.0 with a combination of at least one strain of Streptococcus thermophilus and of a strain of Lactobacillus helveticus forming exclusively L-(+)-lactic acid, and drying.
